Mad Hungry with Lucinda Scala Quinn

One night last week, before traveling on a trip destined for a ski house populated with ten people, I decided to get ahead of the meal game. So, just before bedtime, I put a pork roast on one rack and this pan of tomatoes, shallots, garlic, thyme, olive oil, salt and pepper on another rack. The food cooked all night at the lowest temperature. Those of us sleeping in the apartment alternated between utter rapture at the aroma and annoyance that it made for a fitful sleep. But, when we awoke both were cooked perfectly. I pureed the tomatoes--the idea was to have tomato sauce ready for our arrival at the vacation home, along with a couple pounds of pasta and a few heads of broccoli meant dinner was planned, preventing the temptation to overpay for bad food in a vacation area. The rest of the week I made meals for ten every day all for under 500 dollars total.

Breakfast, lunch and dinner. More ideas to come. But, don't be afraid to plan ahead for vacation meals. It mightn't seem like restful behaviour but in the end it'll make your life easier, more delicious and way more fun in the long run too.

  • This looks so good Lucinda I might do it at the weekend. I was going to make spaghetti bolognaise and fresh pasta but I think I'll do your sauce instead. Did you take out the thyme before pureeing?

  • Hi Pru-I responded earlier--not sure why it didn't post. Yes, strip the stalks of the leaves and discard before pureeing. It has a very slight char/smokey flavor which is awesome. I fed 10 people with the amount.Best,LSQ
