Recipes from Today's Show: Chicken Milanese

Posted by

TODAY on MHTV: Calder is here to help me make a classic Italian dish—tender and juicy Chicken Milanese. I like to serve this with Spaghetti Pomodoro; Pomodoro is a very basic sauce that really focuses on using just a few (but the best) ingredients and can be applied to just about anything that requires a tomato based sauce. Finally, a simple steamed spinach dish is drizzled with a little lemon. Save the leftover spinach to mix with your eggs the next morning. More from the show.

  • Lucinda, I love your cooking show. It is not like Food Network with all of the ingredients that are not readily available. Most of the cooks on the Food Network are chefs. The average person cannot cook what they demonstrate.

I watch and record your show, so I can go back and watch it again.

  • I love this show!!!! I love when she has her boys on. It made me laugh so hard, when her son was eating the ribs and she gave him that look like... we are on tv are you eating while cutting??? He said no mom "Iam a good boy" It was so cute!! He went back to being 5 yr old. I love when he is on the show. I have a son about the same age and it hit home. Great show keep it up.

  • This is without a doubt my favorite cooking show.
Made many of Lucinda's recipes and they were all delicious. I have three grown sons and when they lived at home they really ate. Colder is a doll, looks like his Mom with those dimples. Just ordered the book, Mad Hungry. Thanks so much, Lucinda.

  • My husband and Mom agreed this was the best chicken I ever made. Didn't want to make breadcrumbs so I used a box of Japanese Panko crumbs and it was gooood. we made the leftovers into a delicious chicken parm. I loved the spinach but still didn't do it right - there was water in my pan - oh well. Thanks!!!

  • I just want to say I love your show. Easy great recipes that busy Moms can do. I did this whole dinner and used gluten free bread & spaghetti noodles to make it a gluten free meal. My 8 & 6 year old loved the chicken and the spaghetti sauce was wonderful. Kids still didn't like the spinach but I'll keep trying. Thanks for a great meal.

  • Dear Lucinda,
Love your show...I have two grown sons and I really enjoy the loving banter between you and yours. I will be preparing this wonderful Chicken Milanese tonight for my hubby. It looks so yummy! Thanks for sharing.

PS...thanks for keeping it simple and for never saying "EVOO, Extra Virgin Olive Oil" ;-)

  • Lucinda, I am "Mad" crazy for your show and agree with other comments of today. Can't wait to try the chicken milanese, spinach, and spaghetti pomodoro! Love seeing your boys in the kitchen with you too! Your down to earth approach in the kitchen is much appreciated! I now have a huge amount of greens in my fall garden! Any chance I can substitue greens for spinach in your recipe??? Looking forward to many more of your shows and maybe your cookbook from Santa this year!
    Thanks, Laura

  • Made this whole menu last week for dinner
And the whole family loved it!

  • I tried your chicken milanese and it was fabulous. I have been trying out new recipes since I was 14 but have never been inspired to comment. It was the most surprisingly good chicken dish I ever had. And so tender! Thanks

  • The chicken was fabulous and the sauce will be my go to recipe from now on! Super easier and so good! Love your show!

  • i was so happy after reading you Mad Hungry book to find this show come on the air a couple months later. I am a stay at home mom with one little boy and another on the way and a husband that will not touch vegetables. I love the simple approach on veggies and just doing them right! My son will eat this spinach all day! Love watching the show and can only hope to have a house full of men to cook for and spoil all day, it is crazy, fun and very rewarding!
