Mad Hungry with Lucinda Scala Quinn

Recipes From Today's Show: Jamaican Dinner

Posted by

TODAY on MHTV: Heat up in the cold weather with a couple spicy dishes from the islands. Curry chicken can be prepared in advance and tastes even better the longer it sits. Serve it with mango chutney and callaloo (Jamaican greens, similar to kale and Swiss chard) on the side. More from the show.

  • I actually have a question --- I would love to know how and where to get the cast iron pot that Lucinda used for her curry chicken on today's show (Monday Dec 27th.) I have looked high and low if you could please help that would be great.

    Thank you so much

  • Mary: this is the "paella pan" from the le crueset collection vailable online.

  • I too have looked for that pan. Is it also called a "braiser"? If so what size as I have found three different sizes. I really only have room for one and wondered which would you recommend.

I love your show! And everything I have made out of your cookbook and from the show has been loved by everyone every time! You have rejuvenated my cooking, thanks!

  • I made this meal (curry chicken, swiss chard and mango chutney) for New Year's Day dinner - it was fantastic! I discovered that I love swiss chard and I will never buy store-bought chutney again! Very easy, very flavorful meal (in addition to the already mixed curry powder - I added more tumeric, coriander and cumin) - looking forward to leftovers.

  • Thank you a bunch for sharing this with all people you actually recognize what you're speaking about! Bookmarked. Please additionally visit my site =). We can have a hyperlink trade contract between us
