Mad Hungry with Lucinda Scala Quinn

Recipes From Today’s Show: Chicken Parmesan Menu

Posted by

TODAY on MHTV: Chicken Parmesan is a great meal for a bunch of different reasons. It’s hearty, delicious and best of all you can make all of its parts in advance then simply bake it off when you’re ready to eat. Blanching spinach is a fast, easy way to cook this leafy green and to end dinner on a light note, whip up a lemon soufflé pudding—it’s a snap, I promise. More from the show.

  • Love your show!!!You have inspired me more than any other cooking show (and I've watched them all)...to experiment with new flavors and techniques. Thank you so much for making me a happier and better cook. Lucinda, you are the best!

  • Lucinda! I am a foodie.. so much so I have moved to the wine country recently. I have to say in viewing your program I always feel that while your preparing a recipe, you make me feel as a viewer you have our best interest as well as your take on what it is, that is best about each dish. Trust is very important in TV and I feel like you know that. Brava!!

  • So happy I found your show on the Hallmark Channel. I just love the way you show us how to cook the recipies. Its because you make me feel calm and not RUSHED like those other cooking shows. You have a special gift of the way you cook and at my age (71)I really enjoy watching you. I love watching your sons when they are with you also. Thanks for making me smile.

  • Hi: I've watched several of your shows and they are great well done, lively and compelling. As a marketing guy, you need to get your name out there more often. It took several shows to figure who you were. Try to own the show more, have your guests say your name more often or brand it better in the intro. I Like the family aspect involving your sons. One more comment, your intro music is really bad and if I'm not mistaken it's already being used on another show for remodeling or something. If not exact the tune its too close. Pick a different tune. Kudos tho keep going!(don't post my comments please, for your eyes only). steve

  • I love your show and recipes you are the only one that I love to watch and try your way of cooking it is just sounds and tast like home cooked meals and it seems and feels like it comes from the heart not just from someone who wants to be on tv I love the way you talk about your family and how close you are to them they are lucky to have mom who loves them and can cook as good as you exspecially since they are boys and everyone know boys have big stomachs to fill I try and write down every recipes that my family and me will like to try and I keep trying to fine your books but have had no luck there Im in OKlahoma so if anyone knows where her books are let me know please

  • Thank You! Thank You! Thank You!
I have 3 young children so between driving an hour to school, designing from home, PTA, Boy Scouts etc... you can imagine I'm pooped when it comes to making homemade meals at home. I've tried to get into other cooking shows but something about your personality on air made me relate to you. Needless to say, I watch and record your show and this past week I made my very first homemade marshmallow chocolate cupcakes. In the past I've been scared of baking but let me tell you everyone LOVED it!! You have inspired me SOO much that I've decided my (late) New Year resolution would be to cook fresh homemade meals more often and stop depending on Uncle Ben and Stouffer's premade Lasagna. LOL
Tonight, I'm making the Chicken Parmesan and Lemon Souffle. I'm soo excited. Thanks again Lucinda!

  • Could you please give me an idea to cook chicken breasts. I buy them by the bag, but I am tired of just frying, or chicken salad, or
BBQ (which I fry my BBQ), or soups, or stews. Cannot afford alot of special ingredients and I don't have alot in my spice cabinet. Can you help me make a delicious meal for my family? Thank You in advance.

  • Dear Lucinda,

I just wanted to let you know that I made the Chicken Parmesan and it was just amazing.

One of my favorite meals to order when my husband and I would go out was the Chicken Parmesan and thanks to you I found how simple it is to make. It was a big hit with my family. I so much enjoy making this recipe and eating it that I have passed this wonderful recipe to my co-workers. Also, I just wanted to let you know that I TiVo your show everyday and when I get home from work and things have settled down a bit, I sit down and watch your show everyday. Keep up the great work.
