TODAY on MHTV: I’m making the mother of all soups: minestrone. The flavor gets built from the bottom up: sauteing onions and garlic, adding other veggies like zucchini, cauliflower, & tomatoes and to really give this soup an extra flavor boost, tossing in a Parmesan cheese rind-- adding one of these in a soup is a great way to create a deep flavor, especially if you’re not using meat. On the side, my grandmother’s recipe for English muffin tidbits is perfect for dipping and one of my mad hungry boys drops in unexpectedly with a big bag of laundry and an even bigger appetite.
