Mad Hungry with Lucinda Scala Quinn

Recipes from Today’s Show: New Orleans Menu

Posted by

TODAY on MHTV: There’s nothing like the food you’ll find in New Orleans with its mix of Cajun, Creole and Southern flavors. My brother Jim lives in Louisiana and he’s nailed how to make the best “barbecued” shrimp, a staple in that part of the country. On the side, string beans tossed with 3 kinds of pepper and honey are spicy and sweet, and their flavor gets even better after a quick flambé in cognac. Top it all off with a 3-spice bloody mary, and you’re ready to eat. More from the show.

  • can't wait to see this!!! i was in NOLA for x-mas but sick the whole time.

  • I would like to try the recipe for "Uncorned Beef" but can't find a brisket in my town. Can you suggest another cut that would work?

  • Lucinda,
I've been watching your show for the past few weeks and love it! Why didn't I watch at the beginning after tivo'ing Martha's shows??? Helloh!!!

Your recipes are simple, tasty, and you know how to cook for hungry family members! I like it when you have Calder, Miles and even Luca on the show as your sous chefs, I think it makes your show really heartwarming to see how they are learning how to chop, ask questions and give their own comments.

    Keep it up!

  • Hey Ms. Lusinda:
Where did you get that (Tall sided?) cast iron pan? Was the side of the pan Longer than usuall?

  • I love cooking with cast iron but since I have an electric glass top stove I have been afraid to use my skillets. Do you think it would be okay? Thanks for an e-mail reply.

  • OMG-The bloody mary is umame (not sure if I spelled that correctly). I rarely drink liquor. My husband asked me to get a recipe for a bloody mary and I had seen the show on Mad Hungry where Lucinda made a bloody mary. OMG-the recipe is fantastic. It is so delicious. Thank you Lucinda, that's probably the best liquor drink I have ever tasted. Love the horseradish, tomato juice, etc. AWESOME!!!
