Week Night Dinner Challenge Inspiration

Looking for some inspiration for the challenge? Here's a few week night dishes that I make for my family after a busy day.

1 Love k-babs--don't forget about them. Threaded morsels so easy to constuct ahead for summer eats. Used sirloin tips, pepper, zuch, onion--that's all with s&p then grill. But, also am mad for these lamb ones too EDF served with yogurt on pita: http://ow.ly/49yxB
2 Vege dinner at home: none better. Kale, fingerlings potatoes and mad amounts of homemade Sriracha which splattered all over as the top flew off. Still yum though.
3 When "there's-nothing-in-the-house," except some old pasta and a few random carrots. Put pasta in a EVOO filled cast-iron pan. Let sit w/out moving for 5 minutes on medium heat. Add grated Parm. Act like you planned it.
4 Maybe a low fat meal isn't such a bad idea. Mushrooms, clams and miso broth.
5 Cream of tomato soup (no cream). Took 15 minutes to make with butter, onion, garlic, tomatoes, chix stock, s&p. Move over Campbell's.
6 Steam bok choy with sliced ginger and douse with oyster sauce too. Man I love this vegetable.
7 More soup: chicken, Chinese broccoli, egg noodles awaiting broth, poached eggs and sriracha
8 Weeknight dinner pasta. Shredded 1/2 red cabbage, onion, garlic, bacon, chili flakes, lemon rind, currants. Deglaze w/ red wine vinegar and sauce it up w/ pasta water, milk and grated Parm. Toss w/ Penne (made 2 pounds).
9 Arrived home post MHTV shoot and cries of "I'm starving" hit my ears. Scrounged dinner: toasted lavash, melted cheese, sautéed escarole with garlic, fried salami and eggs (topped with hot sauce, natch)
