Juggling a job, family, and life in general can sometimes be hectic but that doesn't mean that your dinner has to suffer. Even with a busy schedule you can make and enjoy easy meals that are affordable and delicious! Check out the gallery below for some of my weeknight go-to dishes:
1 Chinese Egg Noodle Soup: chicken, Chinese broccoli, egg noodles awaiting broth, poached eggs and sriracha.
2 Love k-babs--threaded morsels so easy to constuct ahead for summer eats. Used sirloin tips, pepper, zuch, onion--that's all with s&p then grill. Also am mad for these lamb ones too from EDF.
3 Weeknight dinner pasta. Shredded 1/2 red cabbage, onion, garlic, bacon, chili flakes, lemon rind, currants.

Every recipe that I have made that comes from Lucinda Scala Quinn comes out perfectly and my family always loves it! Thanks for inspiring me to make delicious, healthy food for my family. It's one of the best things a mom can do and the kids will not forget it! When my 13 year old went to sleep away camp when he was 10, all of his letters were to the effect that he missed my cooking!

I was always cooking the same dishes over and over until if found out about the mad hungry cookbook and then the tv show.. My kids love the dishes i make now, i am soo happy to have stumbled onto lucinda scala quinn i look forward to her recipes and have confidence in the kitchen! thank you!!
