TODAY on MHTV: It’s finally here: I’m making the winning recipe from our Weeknight Dinner Challenge! Pam Glynn sent in an easy, delicious, hearty recipe that won us over instantly. This one-pan dinner has got it all: flavorful marinated chicken, healthy garbanzo beans, and juicy tomatoes. Then, everything is roasted until its golden and caramelized to perfection. To go with our “Winner Winner Chicken Dinner”, I’m making an escarole salad drizzled with a walnut-infused vinaigrette and a creamy dessert of rich rice pudding with sliced plums.     Love the chicken and chick peas. Making the radicchio with the chick peas from Wednesday's teacher episode this weekend. Beans are great additions to meals.

    Seeing you only 4 days a week is horrible. The network must out you back on back to back for one hour. I will voice my opinion to Hallmark Channel.
    This weeks recipes have been off the charts. Today's contest winner's chicken looks terrific.
    Wednesday's teacher John's rollatini and vegetables looked mouth watering. I love reading what your other bloggers say. It looks like we're all making rollatini this weekend. I hope to hear how everyones came out.

    Seeing only 4 episodes a week is so unacceptable. We all want you on for one full hour a day. Doesn't the network know that you have a big following of very loyal viewers??

  • I make my kids watch your show with me. I always tell them to look how Calder cooks in the kitchen with his mother. I want them to do the same here with me. Well, it's finally happening today.
    My kids and I were so delighted with your friend John Contratti. My daughter is in college now studying to be a teacher. He truly inspired her to be that "special teacher". The one who is creative and enlightening to his/her students. So this morning we all went to the store and bought all of the ingredients in Mr. Contratti's recipes. As a family we will prepare them together.
    I really have to thank you for this Lucinda. You are such a warm, special individual, and you bring wonderful people into our home with you. Hope you and your family have a great weekend. I'll inform you how well our dinner turned out.

  • Chicken recipe was delicious but too salty.
    Maybes should be 2t. not 2T.

  • Made the winner winner chicken dish I was so disappointed. TOO SALTY it made the recipe not enjoyable. Maybe should be 2tsp not 2Tablespoon what a waste of food. Company could not eat as it cooled down the taste became even stronger. What a shame. Do not know how this recipe won.

  • I made it and it was delicious, but a bit salty. I would say that 1 tablespoon of salt would be perfect. Love the way the tomatoes burst in the mouth!

  • I tried the Winner Winner Chicken Dinner recipe. I loved the convenience of marinating in one bag, just pouring it all in a baking dish and serving it piping hot all in the same dish. However, my husband and I both agreed it was way too salty. I would cut back the salt by more than half the next time I make it. We loved the chick peas and tomatoes served cold as leftovers as well as hot from the oven.

    The salad was a hit with my husband and I. The next morning I used some of the cup of drained garlic walnuts reserved from the oil used in the dressing in a veggie omelet that was wonderful.

    I didn't have any luck with the rice pudding. It was not the creamy texture I had expected - perhaps because I had used "low-fat" 1/2 & 1/2.

    Love your show, your easy does it attitude and the interaction with your guests and sons - keep up the good work!

  • I have searched everywhere for a meatball recipe shown on the Mad Hungry program which included diced Mortadella. Lucinda made a comment that she has substituted bologna when in a pinch. Please help! Thank you!

  • Lucinda i love your show! Can you tell me how to make walnut oil, we saw you mention it on a recent show but missed the method. Appreciate it very much, i record your shows all the time and have tried the wonderful foods. Thank you

  • I made this dish on Sunday. We loved it!! So nice to have something different, easy and delicious to addto the mix. Sorry, but I have to agree it was too salty. Next time I will just cut back. The smoked paprika is wonderful.

    Lucinda, I love you, your show and your kids. It's a joy to watch you each day. I can see why you are tops with Martha.

    I enjoyed reading your cookbook too. It's wonderful cooking for girls as well though :)

  • This chicken recipe may be one of the best ever!I have cooked since I was five with my grandmother and rarely do I follow a recipe without tweaking it from the beginning. However, this one I followed exactly and it was gone in minutes. It has now been distributed to my cooking friends on the block. I wouldn't change a thing. It really is a winner winner.

  • I cooked this recipe on monday and I love it. I like dark meat, so the olive oil made it a little too oily. I used 1 T. of sea salt and it was great. I loved the convenience and I actually had everything on hand. And I am always happy to use my smoked paprika.

    I also loved the walnut oil. I only used @ 1/3 of a clove of garlic smashed and it was perfect (for me).

    This really is a winner.

  • I love the Mad Hungry Show!!! I have not missed an episode yet, (thanks to the dvr) Tonight I prepared Winner Winner Chicken Dinner for my husband! We both loved it! The flavor was wonderful and the chicken was tender and moist. Next time I will make this for company!

  • Delicious! I used White Northern Beans instead of the garbanzo b/c that's what I had & it came out great! I don't use a lot of salt in my cooking to begin with so I always automatically cut it back a little. Just my opinion, but 2 T is a little too much for most recipes & if people would just use common sense & cut it back to begin with, they wouldn't end up with a dish that's too salty! Congrats to the winner, great dish!

  • Great recipe! I only wish I hadn't turned my back on the bag o' chicken, beans and tomatoes...the sound of garbanzo beans spilling onto the hardwood floor will forever be etched into my memory.

  • I am going to make the chicken recipe again this week end omitting the salt totally.
    The first time I made it we could barely eat it because of the saltiness.
    I do use common sense but since I have made other
    recipes from this show,and enjoyed them, I didn't question the quanity of salt.

  • I made this recipe twice and made it exactly as listed, including the 2 T salt. No one thought it was too salty. This is a recipe that is now part of our regular rotation. Take the time to get a good quality Paprika - maybe Spanish Pimenton, not the stuff you get at the grocery store. Maybe try Penzey's, Sur la Table or Williams-Sonoma. It will make all the difference in the taste of the final dish. Good quality ingredients makes for a better tasting dish. It may cost more for better Paprika, but it's worth it.
