TODAY on MHTV: I had so much fun visiting with a fourth-grade class in Garden City, NY, last winter that I invited their teacher, John Contratti, to come on the show and share some of his favorite recipes: an easy, cheesy eggplant rollatini and a savory side dish of sauteed radicchio and endive tossed with chickpeas and walnuts.     My cable provider is Verizon, so when I saw that Mad Hungry's guest was teacher John Contratti I thought it was a new episode. I still watched the repeat episode and once again loved it. Please bring him back to cook. He was my favorite guest cook from last season.

  • Oh i love you so much, Lucinda. I am so glad you are back on with 2 episodes every day..even when it is a repeat!!! Your show makes me so happy and HUNGRY! I LOVE LOVE LOVE when you have your family on..especially Calder! He is adorable and i love the interaction with him. I can honestly say when i watch your show i feel so comfortable and cozy and warm. You just make me smile. And of course all your recipes are outstanding..i think we have had the roasted cauliflower once a week :-) tonite will be the meatloaf with bologna.     As for today's episode, I found the recipes to be top notch. This gentleman is more than a teacher, he's a COOK!!! I DVR each day and watch at night. I hope I turn on the show in the Fall and I see this gentleman cooking again with you. He so deserves to show off his cooking talents once again.

  • Lucinda, I have watched your knife skills. Very impressive !! I see that you use a Misona 440. After going to their website, I see that there are several. Could you tell me which knife you use and do you use the same one for cutting meat as well as cutting veggies.

  • I caught just a few minutes of this episode as I was walking out the door yesterday morning. I have an eggplant in my fridge that needed a different take on it than eggplant parmesan. Thanks for a new recipe, just in time. I look forward to making this dish.

  • I made these recipes last night. They were delicious. Does anyone know why Lucinda is so selective when answering on her blog? These two recipes and episode received such great feedback from viewers and there wasn't even a response to any of our questions and comments.As a viewer I'm always interested to see what other people are saying and love when the host of the show responds to us.

  • I made this eggplant dish and really like it. The second time I made it I brushed the eggplant slices lightly with garlic-herbed olive oil and then baked them in the oven at 400 for 15 minutes. This saved the step of cooking them on the stove top. I think baking them in the oven added a layer of flavor and was easier for me do do in quantity. I am adding this to my book. Thanks so much!~

  • I finally made this recipe of eggplant and it was so great. The side dish I made weeks ago and loved that too.
    Looking back,I just don't understand why Ms. Quinn did not not make one comment on this blog. So many viewers commented about the super recipes and the wonderful guest of the day, and she made no mention of either. Everyone is congratulating her on 50 new episodes, but still nothing. I find that extremely unprofessional and rude. If she didn't comment on other day's blogs I could understand it. Going through the daily blogs, she'll have one comment for the whole day and she'll comment back to that one. Why have a blog if you can't take the time to respond back to your viewers? It shows disrespect to viewers who take the time to watch and write each day. I know so many people who have never heard of Mad Hungry and even that a Hallmark Channel exists. You think people would be more gracious.

  • Fabulous! John Contratti's recipe is wonderful. I knew John back in our college days. His mother is an amazing cook so he comes by the talent naturally. Thank you for sharing this food with us. I will try your recipe at home with my two boys. John must be an amazing teacher. What a great show.
