When I begin planning for the holidays, I go straight to my butcher to pick up a great cut of meat. This Christmas I've got myself a ham that I'm "decorating" with some simple orange slices that make it pretty to look at and adds extra citrus flavor to the marmalade glaze.  For sides, scalloped sweet potatoes are a twist on the original and green beans get extra flavor from mushrooms and toasted almonds while my lemon cake is sweet, simple and goes great with coffee.

  • I made the scalloped sweet potato w/ vidalia onion and english cheddar. Actually I used a cheese blend because I could not find english cheddar.Is there another cheese that would be a good substitute for the english?
    It turned out(tasting)wonderful,very sweet fragrant spice flavor. I'd never thought to marry those spices like that. There was an awful lot of liquid still in it when I took it out of the oven. Should I have removed the foil/parchment for the last 45 min.? It does not say on the recipe to do remove it so I left it on. Would more of the liquid have evaporated had I removed the cover?
