I made this chicken dish for my family and everyone but the 4 yr old loved it! I never had much use for chicken thighs and am pleased to discover that they work beautifully for this dish. I also made the empanadas a few weeks ago (amazing!) and did the Asian spatchcocked chicken as well! Thanks so much for so many great dinner ideas- I am a big fan!
