TODAY on MHTV: I came home to find some beautiful fresh eggplants on the counter, so those are going into one of my recent inventions --

eggplant Parm stacks. Think of it as deconstructed eggplant Parmesan, ready in half the time with twice the flavor. I'm rounding out my Italian vegetarian dinner with ricotta bruschettasalad, and a tangy, refreshing Campari-orange cocktailMore from the show.

  • I watched the show today and really wanted the other two recipes which I didn't find here. I would like to have the black bean and rice recipe as well as the chic pea and pasta recipe. Please they looked so yummy and is a great idea for some pantry cooking.

    Sorry to have to tell you this but parmesan cheese is NEVER vegetarian as it is always made with rennet from a calf's stomach. This is a legal obligation for all Parmesan cheese as European law classifies the name as a protected designation of origin

  • I've always wanted to see John Contratti come back and cook with Lucinda. I think everyone who loves Mad Hungry has asked for that. What's going to happen to Mad Hungry after October 1??

  • MH has posted many, many times in recent weeks that she is developing a new show but is looking for a network. My guess is that she might be negotiating with more than one network and of course would be less than astute to share specific information with the public until she has a deal signed.

  • I tried to find the recipes that were on today's show{thursday,Sept. 20,2012} namely the vegetarian bagel sandwich, the fruit smothie How can I get those recipes?

  • I agree with Grace and Penny, teacher John Contratti had the best recipes when he was on Mad Hungry and I want to see him back on the show.

  • Most people thought that Italian foods are fattening - spaghetti, carbonara, linguine, pizza to name a few. They didn't know that there are more Italian foods than just what I have mentioned. Vegetables can also be turned to delicious Italian food just like the Eggplant Parm Stacks.

  • After watching Lucinda make the Eggplant Parm Stacks on TV, I knew I wanted to try it because I have always loved the traditional Eggplant Parm. I got some fresh eggplants in an organically grown produce box I purchase through subscription, so I was excited to try it. The recipe was very easy to make and oh so delicious!! My family LOVED it! Even my husband who doesn't get that excited about foods called it absolutely perfect and delicious! All those flavors melded together - the melted mozzarella, crispy breadcrumbs with parmesean, sauce, and eggplant - for a tasty, wonderful "party in my mouth"!! I subbed Classico Four Cheese pasta sauce for the tomato sauce because it was on hand. This is the best Eggplant Parm I've ever had, better than any Italian restaurant's. I'll definitely be making it again, and again. Thanks for such a delicious recipe!
